The Beetnik Daiquiri

Screen Shot 2020-04-03 at 3.03.31 PMThe February @homebarawards contest was to make a cocktail using beets and that is also frozen. My beet syrup turned out quite delicious and I’ve made several cocktails with it but none frozen until today.

This #homebarawards theme was challenging mainly because its winter and who wants a frozen drink in February when you live in a northern clime?!? But this particular day was unseasonably sunny and 40 degrees, so I took a leap and made this beauty.

I decided on making a frozen daiquiri of sorts, so I present to you my version of one – The Beetnik Daiquiri. This drink uses dark rum, which I chose for its fuller flavor to complement the strength of the beet. I picked up a bottle of @originalbumbu to try with it. This dark rum has a smooth, sweet taste with a hint of coconut on its nose which I think pairs well with the earthiness of the beet. It is also wonderful to drink on its own or over ice with a lime.

This daiquiri isn’t as tart which I prefer. It has a more balanced taste and goes down easy. I can see this being a favorite at The Atomic Duen Ranch (our tiny cottage on Lake Michigan) this summer.
Recipe:
Place 1 cup ice in blender, add 2 oz @originalbumbu rum, 3/4 oz beet syrup* and 3/4 oz fresh squeezed lime juice. Blend and pour into a tulip. Garnish with lime wheel.

*My beet simple syrup was made with 1 cup turbinado sugar, 1 cup water and 1 sliced beet.
